
CVS Image shows larger pieces of marbling as green and smaller flecks as yellow. The three values recorded at the bottom are the % value is the measure of the amount of marbling in the ribeye. The top measurement is the ribeye size and the bottom measurement is the backfat measured in inches.
The orange and green lines are where the backfat is measured.
You can see from the photo that this ribeye is lean and flavorful.
